Xanthan Gum

It is a polysaccharide used as an additive in the food industry, where are required processes with rapid hydration. It is produced in a process that involves fermentation, glucose and sugar with the bacterium Xantomonas Campestre.

Properties of Goma Xanten

  • Provides an excellent suspension for insoluble solids and oils.
  • Provides stability during freezing and melting.
  • It shows low viscosity during processes.
  • Gives great viscose solution to low concentrations of rubber.
  • It shows low viscosity in solutions exposed to high temperatures.
  • Compatible with solutions with high salt concentration.
  • Soluble and stable in acidic and alkaline solutions.
