Modified Starch

It is a polysaccharide used as food reserve, especially by plants. In the food industry, they are used as additives that are modified to increase its stability at high temperature, acid concentrations and freezing, so they can maintain a good texture.

Properties of modified starch:

  • It humidifies and gives texture to foods.

Tapioca Starch

Also called tapioca flour, it is a flavorless and refined white flour made from the cassava root. Tapioca starch has a very good quality and it is a substitute for arrowroot starch and cornstarch. This starch doesn’t have gluten and it is often added to gluten-free baking as a thickener.

Applications:

  • Baked goods.
  • It is used as a thickener for sauces and soups.
