with hot acidic water, precipitating them in dissolution with ethanol or
aluminum salts. They are byproducts of the fruit juices industry.
Pectins properties:
- They are used in the food industry in concentrations lower than 1%, to
give stability and / or consistent properties.
- The nutritional changes of the values in products that are used with
pectinas, are virtually imperceptible.
- They have gelling uniform agents, which give a high-quality food.
- They have viscosity properties, as well as protective colloids and stabilizers.
